The quilted quicker picker upper :-)

Nothing makes me happier during this time of year than my Azure Blue quilted jacket (and this picture of a REALLY cute guy in his quilted jacket- He's not as cute as Coach but pretty close.) Back to the subject...

My Land's End jacket! It cost me an arm and a leg but I LOVE IT! I wore it today over my cute pink and white striped RL button down...which also cost and arm and a leg.

Anyway, enough about my extremity sacrifices. (My ADD is KILLING me today.) Let's talk about quilted Jackets. If you don't own one I would advise it. They are the perfect transitional coats, they protect from the cold wind and rains that come with the Spring time weather but also keep you from sweating into a puddle in the afternoons because they are surprisingly lightweight. Here are a few of my FAVORITE QUILTED COATS: Just the picker upper you need!
J.Crew makes this gray jacket for CrewCuts. Isn't it sweet? Wish I had a little one to put in it!
...Nope, never mind. I just like looking at the jacket.

This little gem is $398. And worth every penny if you ask me.
Burberry is a great brand. Everything they make (that I own) has lasted me a long time
with NO wear and tear. If you have the money, I say splurge!

If not, here is a $40 alternative :-) From Land's End, snap pockets and a zipper front.
It's different than mine (I have a snap front) but equally as ideal!
I'm heading to Nashville tonight with my friend Emily, more shopping for Spring Break! I hope you all have fun plans for the night too!

The silver bullet.


Isn't it lovely? Doesn't it just look like summer? Bar-b-ques, Church carnivals, Catholic Picnics...Diet Coke, friends, The drink of champions.


The above picture is what I see almost of every school day- We've grown to love each other!


I think it's pretty clear that I'm a Diet Coke fan. I'm actually pretty new to the DC fan club. I started Weight Watcher in the beginning of February and one of the big changes I had to make was drinking REGULAR soda at school during the day. I wasn't drinking soda hardly at all until I started my new job in January. And since it's there, I'll drink it. Coach and I never keep soda in the Apartment anymore so it's not like I drink it at home but at school....I was drinking 2 or 3 cans a day!!!!! Gross, I know.

So in order to curb my sweet tooth after lunch I have started drinking 1 (ONE!!) Diet Coke. It lasts me about 45 minutes before it's warm or gone. And it gives me the sweetness and caffeine I need to make it through another 2 hours of "Sit down please" and "No calling out, friends" and "Zach, what is that in your mouth?!?!" YIKES!

Now, with my recent increase in diet cola consumption I started to wonder- Are their risks? Diabetes? Cancer? BRAIN TUMOR? A little dramatic I do believe. My Dad always says, EVERYTHING IN MODERATION! And I think Diet Coke fits perfectly into that category. I did find an article from the Mayo Clinic that I thought you might all enjoy :-) Just a little something to make my Diet Coke drinking comrades(sp??) feel better!

Getting Organized!

My future sister-in-law came to visit me this weekend and in preperation for her visit I cleaned our little shoebox from top to bottom. It got me in an organizational kind of mood. I pulled out my pink agenda and I started updating my life.

I'm pretty well able to keep track of my life without it but I feel so much more secure now that I'm carrying it around with me. It's appeal is less about the activities I chart and more about the financial management it adds to my life. I can mark paydays, auto withdraws & monthly payments I can't make online...yes, there are still some places that require me to deliver my check- my storage unit, my Zumba class & our rent. It's annoying so I'm glad to be writing it all down.

VICTORY!

It was excellent! Not only was the Chicken Pot Pie (CPP) delicious, it was one of the prettiest meals I've ever made! My Ingredients: 1 Pie Plate from Grandma Craig, Frozen Mixed Veggies(Semi-thawed), 1 can of cream of chicken soup, 1 can of chicken broth, garlic, S&P, Parsley, EVOO, Chicken Breasts(not pictured) and 3tbs of flour.
In the left bowl I have mixed the veggie, CofC and 3 chopped cloves of Garlic, in my Pyrex measuring cup you are looking at 3/4 cup of chicken broth, 3 tbs of flour and my S&P&Parsley. I used about a TEAspoon of each, but to each their own. Next you want to cook your chicken in a skillet in the EVOO and the remaining chicken broth (see below for more details) while it's cooking, unroll your now room-temp pie crust. One roll into the bottom up your pie pan. When the chicken is cooked, add it to your creamy veggies, dump it into the pie shell and cover with the broth/flour/seasoning mix.
Cover your filling with the remaining pie crust, pinch together along the sides and cut slits in the top so your CPP can breathe :-)
Insert your CPP into a 400 degree (PREHEATED!) oven and set your timer for 40-45min. I needed 45 for mine.

BEEP, BEEP, BEEP!

Remove your CPP.

Slice, Serve, ENJOY!!!


I did do a few things differently than the recipe:
1. I used chicken cutlets instead of whole chicken breasts.
2. I cooked my chicken breast in the skillet WITH the remaining chicken broth. I thought it might help keep my chicken moist and it did! Please forgive me, I didn't take a picture of the chicken cooking because I took that time to pick up some of the crap laying around in our living room before Coach got home.
3. Because the chicken was so juicy, I was able to break it apart into big chunks with my fingers and that made the pie feels much more "homemade"..."Authentic"... you know, "not nearly as processed as it actually was!"


Love and Peace friends! NCIS and GLEE tonight :-) Relax on the couch with some red wine and Chocolate-it's good for your heart, and your soul...speaking of Chocolate, I was feeling so pleased with my CPP I even made a batch of box brownies to finish us off :-)

Monday Night Meal

Coach and I eat together every night. I'm home from school between 3:30 and 4:30 and he gets home from Football (Yes, even in the winter) at 5:30 every night. Coach is soooo picky. Not about his food, he will eat anything...he just doesn't like to eat after 6:30pm. He claims that that is NOT a dinner time and even if he's starving-he won't eat at 6:31pm.

I know that by serving dinner at 5:30 sharp I am only enabling his whiny ways, but I'm trying to pick my battles and honestly, by 5:30 I'm hungry too :-)

My very special people.


In 3rd grade writing, the kiddos are beginning to learn the basics of Powerpoint. As a favor to our 3rd Grade writing teacher, I created a kid-focused, kid-friendly Powerpoint on a special person in my life. As I was creating this "oops I almost forgot" PP I started to think about all of the people in my life who are special.

Last night I went over to a friends house to watch the new episode of Modern Family (if you don't watch it- you should- sooo funny!) and while I was there for 90 minutes we managed to catch up on everything under the sun; our families, our love lives, our diets, shopping, vacations, God, TV and Ice cream :-) How special is this relationship that after 7 years, 10 boyfriends, one HUGE fight and countless sleepovers we can reconnect in just a matter of minutes?!

We're the only ones left living here in Bowling Green. Most of our other friends from college moved home/away right after graduation so we see each other more that we see a lot of other people but it just doesn't seem to be enough. Last night she said, "Sometimes I feel like college never even happened" And I have to tell you that when I get caught up in my day to day routines I feel the same way too. It's so sad, they are some of the most FUN years we will ever have. So I consider myself very lucky to have a friend who brings me back to college and reminds me on a Wednesday night, over a Southern Lady magazine and an episode of Wednesday night TV that College did happen, that it wasn't nearly as long ago and we think and that most of all, WHAT IS PRECIOUS AND WHAT IS PERMANENT IS ALWAYS THE SAME.
